Capris is a soft lactic curd cheese with a mild taste and subtle goat notes in the background. It starts the same way as Curdy, but is then salted and hooped. The result is a mild cheese that is velvety smooth in the mouth. Capris presents well on cheese platters, but is suitable for use in cooking also.
