A Swiss-alpine style cheese that starts as a cooked curd, semi-hard, smear rind cheese that is washed daily to attain a unique natural, earthy rind. As it matures for at least 3 months, it develops an aromatic flavour and texture. The Big B is a large round cheese weighing around 800g that can be hand-cut into wedges. Prices are weight based, $9.50/100g.
